About the role Azyan Pastry is seeking a skilled Viennoserie Baker to join our talented baking team in Surabaya, East Java. This is a full-time position that plays a crucial role in our commitment to producing exceptional laminated dough products and Viennese-style pastries. As a Viennoserie Baker, you will be instrumental in maintaining the highest standards of quality and consistency across our croissants, pain au chocolat, Danish pastries and other speciality items. Your expertise and dedication will directly contribute to the success of our bakery and the satisfaction of our customers.

Key responsibilities Preparing and conditioning laminated dough using traditional and modern techniques to achieve optimal texture and consistency Folding, laminating and shaping croissants, pain au chocolat, Danish pastries and other Viennese-style pastries with precision and efficiency

Managing fermentation times and temperatures to ensure perfect rise and flavour development Operating and maintaining commercial ovens and baking equipment to achieve consistent browning and bake quality Preparing fillings, toppings and glazes for pastry products according to established recipes and quality standards

Monitoring dough hydration, ingredient quality and batch consistency throughout the production process Maintaining a clean, organised and hygienic working environment in compliance with food safety regulations Collaborating with the baking team to meet daily production targets and delivery schedules

Troubleshooting baking issues and making adjustments to improve product quality and yield Training and mentoring junior bakers on Viennoserie techniques and best practices What we're looking
